Job Description

Oversee the entire stewarding operation and supervise the sanitation, hygiene, and cleanliness of the back of the house, operating equipment in line with health & safety procedures and standards.

 

Key Performance Areas:

  • Develop and implement hygiene SOPs, ensuring compliance by all stewarding staff.
  • Oversee cleanliness and organisation of all food handling areas during service periods.
  • Ensure proper setup of workstations, dishwashing operations, chemical levels, and kitchen workflow.
  • Initiate, monitor, and participate in stock takes of consumables and equipment, as well as hygiene audits.
  • Source chemicals and supplies cost-effectively in collaboration with stores.
  • Inspect kitchen areas and ensure compliance with HACCP standards.
  • Ensure extractor fans and ventilation systems are cleaned according to health and safety timelines.
  • Maintain and verify cleaning records and checklists.
  • Monitor payroll costs through accurate record-keeping, rostering, and staff scheduling.
  • Prepare and submit payroll-related documentation to HR.
  • Review and approve staff hours recorded in the Jarisson system.
  • Ensure employee relations (ER/IR) matters are handled in line with company policies.
  • Oversee safe and correct usage of chemicals and equipment.
  • Facilitate reporting and investigation of workplace injuries and incidents, recommending corrective actions.

QUALIFICATIONS & EXPERIENCE:

  • National Trade Certificate in Chemical Training.
  • Minimum 5 years’ relevant experience.
  • Ability to manage multiple kitchens and staff canteen operations.
  • Proficiency in Microsoft Office applications.
  • Knowledge of food safety and hygiene regulations.
  • Health and Safety certification.
  • HACCP trained.
