Job Description
Oversee the entire stewarding operation and supervise the sanitation, hygiene, and cleanliness of the back of the house, operating equipment in line with health & safety procedures and standards.
Key Performance Areas:
- Develop and implement hygiene SOPs, ensuring compliance by all stewarding staff.
- Oversee cleanliness and organisation of all food handling areas during service periods.
- Ensure proper setup of workstations, dishwashing operations, chemical levels, and kitchen workflow.
- Initiate, monitor, and participate in stock takes of consumables and equipment, as well as hygiene audits.
- Source chemicals and supplies cost-effectively in collaboration with stores.
- Inspect kitchen areas and ensure compliance with HACCP standards.
- Ensure extractor fans and ventilation systems are cleaned according to health and safety timelines.
- Maintain and verify cleaning records and checklists.
- Monitor payroll costs through accurate record-keeping, rostering, and staff scheduling.
- Prepare and submit payroll-related documentation to HR.
- Review and approve staff hours recorded in the Jarisson system.
- Ensure employee relations (ER/IR) matters are handled in line with company policies.
- Oversee safe and correct usage of chemicals and equipment.
- Facilitate reporting and investigation of workplace injuries and incidents, recommending corrective actions.
QUALIFICATIONS & EXPERIENCE:
- National Trade Certificate in Chemical Training.
- Minimum 5 years’ relevant experience.
- Ability to manage multiple kitchens and staff canteen operations.
- Proficiency in Microsoft Office applications.
- Knowledge of food safety and hygiene regulations.
- Health and Safety certification.
- HACCP trained.
